Baking With the Sith Witch: Banana Bread

This is what happens when I am left unsupervised..

Ingredients

Whenever I bake, I always try to look for ways to create a healthier version of what I am making. Using the Truvia Sweet Complete eliminates a lot of unnecessary sugars. While I’m not a big fan of Truvia sweetener in beverages, I’ve found it works really well in baked goods. I use Smart Balance all the time instead of butter in recipes and it has always worked well for me.

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 cup Truvia Sweet Complete brown sugar
  • 1/2 cup Smart Balance buttery spread
  • 4 medium overripe bananas

Directions

Preheat the oven to 360 degrees F. Lightly grease a 9″ x 5″ loaf pan

In a large bowl, combined the flour, baking soda, cinnamon, and salt.

In a separate bowl, mash the bananas. Add the Smart Balance spread and Truvia, then blend together to a creamy texture.

Stir the banana mixture into the flour mixture completely.

Pour the batter into the pan.

Bake in the oven for 45 minutes.

If you prefer thicker slices, cut in eight (approx. 224 calories a slice). For thinner slices, cut in ten (180 calories a slice)
